Bally’s Steakhouse to close, be replaced by BLT Steak

Bally’s Steakhouse, one of the more venerable beef palaces on the Strip, will be replaced early next year by BLT Steak.

The new steakhouse will be more than twice of the size of the current one, at 9,300 square feet and with more than 250 seats.

The space will be anchored by a fireplace and decorated with wood finishes complemented by warm tones of amber and tangerine and accented by glints of polished stainless steel.

The original BLT Steak opened in New York in 2004. It has become known for the signature warm Gruyere-laced popovers served with every meal and blackboard specials that highlight seasonal foods. More than 500 wines will accompany a broad menu that includes such signature dishes as tuna tartare, chopped vegetable salad, Dover sole and peanut-butter chocolate mousse and Prime and Angus steaks ranging from a 28-day dry-aged New York strip to a bone-in ribeye.

Bally’s Steakhouse is expected to close sometime this fall. No news yet on the fate of the Sterling Brunch, currently served in the steakhouse on Sundays.
