Tony Gemignani began his cooking career in 1991, working in his brother’s pizza parlor. These days, he counts among his accomplishments being president of World Pizza Champions and the world’s top pizza thrower, as well as holding the Triple Crown title for baking at the International Pizza Championship in Italy. The man who is also behind Pizza Rock recently opened his latest eatery inside Palace Station. The dining room there features large black-and-white photographs of San Francisco and Italy and is reminiscent of a classic pizza parlor that’s been given a modern makeover. All guests receive a free cup of Tony’s Pasta Fazool soup, made with chicken, tomato, garlic, onions, pasta and cannellini beans. Appetizers range from $5 to $13 and include meatballs, garlic bread, four types of hand-cut fries, clams, calamari and mozzarella sticks. Salads come as a single serving ($7 to $8) or family size ($15 to $17). The famous brick-oven cooked pizzas range from 9 inches ($8 to $12) to 16 inches ($15 to $24). The St. Anthony is a white pizza with fennel sausage, peppers and ricotta, while the Bourbon BBQ features homemade bourbon barbecue sauce, ground beef, bacon, mozzarella and white cheddar. Other selections include Classic Italian, Chicago Cast Iron, Cracker Thin, New York style and gluten free. Entrees feature classics such as chicken Alfredo ($16), lasagna ($15), paninis ($12 to $13) and burgers ($10 to $15). Chicken Vesuvio and chicken Marsala feature legs and thighs cooked so perfectly, the meat nearly falls off the bone. Salsiccia baked pasta is covered in sausage and beef that is sauteed with garlic in a light tomato cream sauce, while the 16-ounce house special Dirty Steak ($38) is a 12 day dry-aged USDA cut of meat. A customized homemade pasta option is available as a single dish ($9) or family style ($20), with numerous choices for pastas, sauces and proteins.
