Step into Moe’s Southwest Grill, and the first thing you’ll hear is a chorus of “Welcome to Moe’s!” It’s the standard greeting employees call out and sets a friendly tone for the laid-back eatery. The colorful menu board, located conveniently near the door, shows the offerings: stacks, salads, tacos (flour or crispy corn tortilla) and burritos. Burritos can be had in traditional flour tortillas or in a bowl, and all items can be ordered vegetarian style. Moe’s operates on a “choose your food, your way,” fast-casual philosophy that should be pretty familiar by now to modern diners: Patrons move down the hot and cold lines as their order is being prepared. Select your item and your protein (ground beef, steak, chicken, pork or tofu) and then pinto or black beans, seasoned rice and toppings, including black olives, shredded cheese, lettuce, pico de gallo, sour cream, onions and peppers. Tortilla chips and the salsa bar offerings come free with every order. Some signature menu items include junior versions for kids. At the Downtown Summerlin location (there’s also a Moe’s inside McCarran International Airport and one set to open soon in the southwest), the dining area is in the back, with plenty of booth seating and hanging televisions.
