Sometimes you just want pizza now, but you don’t want to settle for a slice that’s been living under a heat lamp. Pieology Pizzeria solves this dilemma by offering patrons the chance to select toppings for a custom freshly baked, personal-sized pie much like you would at your favorite sandwich shop. First you select a sauce to go atop the 11.5-inch, thin-crust pizza (whole wheat is available, as well as gluten-free crust for $2 more). Sauce choices are traditional red sauce, three-cheese Alfredo or herb butter and olive oil, along with after-bake Flavor Blast choices of Fiery Buffalo, pesto or BBQ sauce. Next select your cheeses: mozzarella, ricotta, Parmesan, feta and Gorgonzola. For just under $8 per pie, you can add unlimited toppings featuring a variety of meats (including sausage, spicy chicken and meatball), vegetables (corn, banana peppers, grape tomatoes and spinach were recently added to the lineup), herbs and spices. Pizzas are then flash fired in less than five minutes. The interior of the eatery is modern, and there are plenty of seating options for families or single diners, along with outside tables. Pieology also offers Pieologist’s Favorite pizzas (Hickory BBQ Chicken, Classic Margherita) as well as salads, sides and fountain drinks.
