Echo & Rig is accessible elegance at Tivoli Village

Echo & Rig Butcher and Steakhouse in Tivoli Village manages to combine the friendliness of your neighborhood butcher with the class of an elegant, yet casual eatery that is focused on — what else? — steak.

Chef Sam Marvin's concept hints at that old Vegas vibe coupled with modern decor and a highly attentive staff. Enter the two-story restaurant at 440 S. Rampart Blvd., and you'll find the bar on the far left, a butcher shop to the far right and an oyster bar at center court. Take the elevator or stairs to the second level for the restaurant portion, with optional balcony dining with misters and fans.

Salad choices include: Caesar; fried spinach; a mix of red onion, cauliflower and broccoli; and kale. Vegetables and small plates include: roasted garlic mashed potatoes; cauliflower; pumpkin squash; burnt peas, onions, mushrooms and saffron; a mix of tomato, watermelon, cucumber and red onion; fennel and apple; and black Tuscan kale.

Do not miss the portobello fries with herb aioli. Other small plates include Brussels sprouts; butcher's sausage with peppers and onions; fried chicken; asparagus and fried egg; grilled octopus; bone marrow carne asada; and Maryland lump crab cake.

Main dishes include: roasted chicken; jumbo shrimp; steakhouse chop; lamb Porterhouse chops; Alaskan halibut; and salmon. Craving that steak? Choose from: the Spencer steak; tri-tip; USDA prime; filet mignon, hanger; flat iron; Florentine rub ribeye cap; skirt steak; New York strip; and ribeye.

Steaks come from grass-fed farms and are served with homemade garlic chips and mushroom Rockefeller. The wait staff will expertly explain the cuts. Available sauces are charred onion, green peppercorn, Bearnaise, blue cheese, chimichurri, red wine demi and horseradish cream.

Dinner entrees average $20 to $30. Sandwiches are $12.40 and include choices such as roasted chicken with balsamic onions, fresh mozzarella, arugula and aioli; and the Butcher Blend Burger with USDA prime beef, bibb lettuce, brandywine tomato, aioli and red onion, with sharp cheddar available upon request. There is an extensive wine and beer list.
