Eggslut to open at Cosmo next year

Eggslut, which has become a cult favorite at the Grand Central Market in Los Angeles, will open a branch at the Cosmopolitan of Las Vegas in 2016, the resort has confirmed, "serving beloved breakfast items day and night."
What sort of beloved breakfast items? Primarily sandwiches, which range from the simple bacon, egg and cheese, which is hardwood-smoked bacon over a medium egg with cheddar cheese and chipotle ketchup in a warm brioche bun, to the more complex Gaucho, with seared Wagyu tri-tip steak, chimichurri, red onions, arugula and an over-medium egg, also in a warm brioche bun.
Then there's the Slut, which is a coddled egg on potato puree, poached in a glass jar and topped with chives. The menu also includes add-ons and sides and a dark chocolate-chip cookie with flaky grey sea salt.
The Cosmopolitan outlet will be the brand's first expansion outside Southern California.
